Limoncello Description


Limoncello is made in every home along the Amalfi Coast. This recipe came from a friend of ours near Amalfi. I have adapted it to the typical lemons found in the United States. Ice cold, it's like a shot of heaven. - Debbie

2 quarts


1 3/4 pints pure alcohol or Everclear
9 lemons + 1 extra lemon
3 1/2 cups water
2 pounds sugar

Methods/steps


Wash the lemons. With a potato peeler, carefully peel the nine lemons making sure not to remove any of the white, bitter pith, and place in a plastic container. Leave the extra lemon whole with the peel on and prick the entire surface with a fine pick. Place this lemon in the container with the lemon peel and pour over pure alcohol. Tightly close the container and leave to stand for seven days.

After seven days, bring the water to a boil and add the sugar, boiling slowly until the sugar has dissolved and the liquid has turned mostly clear. Leave to cool. When cool, add to the lemon and alcohol, close the container again and leave for another week. After this week has ended, strain the liquid, squeezing out the lemon and peel. Pour into bottles. Place bottles in the freezer to get ice cold before drinking. Enjoy – Debbie
