Green Beans with Tomato and Bell Pepper Sauce

1 medium yellow onion
2 ripe tomatoes
2 yellow bell peppers
24 oz green beans
3 cloves garlic, crushed
Extra virgin olive oil
Salt and pepper to taste
2 Tablespoons chopped fresh oregano or 1 teaspoon dried

Methods/steps


Cover bottom of the sauce pan with olive oil and heat on a medium heat. Once the oil is hot, place the onions and garlic into pan and cook for 3-4 minutes, stirring occasionally. Once the onions begin to soften, being careful not to allow the garlic to brown or burn, add the yellow peppers and stir. After 2 minutes, add tomatoes. Stir to ensure all ingredients are coated in olive oil.

Cook the green beans by boiling or microwaving for about 5 minutes, just enough time to par-boil the beans. Add green beans to pan and stir all ingredients.

Cook for 20 minutes on low heat. When ready to serve, sprinkle with the oregano.
