Who doesn’t love ribs? Here’s a great twist on ribs the northern Italians have been eating for centuries. This method of preparing ribs creates tasty and juicy ribs that are succulent and also easy to prepare, just sear and simmer and then, viola, a great rib dinner fit for a Sunday football party or cozy dinner served by the fire. Pair this with my Polenta with Herbs recipe and you have a meal for the toughest of meat and potato lover. – Debbie
Do you ever find yourself trying to find something creative to do with leftovers? Well, back in the war days in Italy, the farmers would take the grease left over from the meat made the day before, deglaze the pan with the wine they had made from their vines, and add whatever they could find in the kitchen and that was the day’s dinner. Here is one of my mother-in laws favorite “leftover” creations which is now one of my staples I keep in the freezer for those days when you have no idea what’s for dinner! It is called Pork Toccio, toccio is Trevisano dialect for gravy. This is very simple to make and makes a large enough batch for freezing.
I was tossing and turning one night not sleeping, per usual, and I began contemplating what I was going to do with my leftover eggplant that I had diced up that afternoon. Then, while thinking about counting sheep….it came to me…..do a twist on moussaka! So, here is a twist I threw together. Lo and behold, it was FANTASTIC, so good in fact, I went and bought more eggplant to do it again so my husband could try it (I ended up eating all of the first go round, with the help of a neighbor…who loved it also). I recently received a message from my friend Michael Baxter who owns a company in Georgia that sells BBQ Smoking Woods, Baxters Original. Michael graciously offered to send me a trial of some of his products.
Within a couple of days my much anticipated package arrived. Inside I found peach wood chips AND this phenomenal peach smoked sea salt. Anyone who knows me, knows I am a FREAK for hamburgers. Well, the rest is history and here is the result...The Baxter Burger. You have to try this to believe it. I've made these several times since as requested from many who have had them.
