Baxter Burger Description

I recently received a message from my friend Michael Baxter who owns a company in Georgia that sells BBQ Smoking Woods, Baxters Original. Michael graciously offered to send me a trial of some of his products.

Within a couple of days my much anticipated package arrived. Inside I found peach wood chips AND this phenomenal peach smoked sea salt. Anyone who knows me, knows I am a FREAK for hamburgers. Well, the rest is history and here is the result...The Baxter Burger. You have to try this to believe it. I've made these several times since as requested from many who have had them. I even made them into sliders for a party.

Get Peachy with Chef Dolce Debbie's Baxter Burger


2 pounds ground chuck
½ cup pecans, finely ground
4 ounces gorgonzola cheese, crumbled
salt and pepper to taste

Peach Salsa:

2 each yellow peaches
2 each white peaches
4-5 each apricots
½ habanero, roasted
1 each red pepper, roasted
½ jalapeno, roasted
1 clove garlic, minced
juice of ½ lemon
2 teaspoons parsley, chopped
salt and pepper to taste

8 – 12 thick slices of ciabatta (pan seared with extra virgin olive oil)
or 4 – 6 onion hamburger buns

Place the wood chips in water for soaking and set aside for thirty minutes while preparing the hamburger patties and the salsa.

Mix all ingredients for the hamburgers together and thoroughly mix. Shape into 4 or 6 patties based on desired size. Place on a parchment lined baking sheet, cover with plastic wrap and set in refrigerator until ready to cook.

Make the salsa by dicing the peaches, apricots, and peppers into a large dice and put into a large bowl. Add the garlic and lemon juice, parsley and season with salt and pepper to taste. Cover with plastic wrap and keep at room temperature.

Drain the wood chips from the water and prepare your smoker. If using a gas grill, place the chips in a roasting pan, turn the grill on high and place the pan with the chips on the grill. Keep the lid closed and allow the chips to begin to smoke.

If using a smoker, place the hamburger patties in the smoker and smoke until the internal temperature has reached a minimum of 145 degrees Fahrenheit. If using a gas grill, turn the heat off on the part of the grill that the hamburgers will be placed and place a heavy piece of aluminum foil on that area, turn the burners down to low on the area that the pan containing the chips is on. Place the patties on the foil side of the grill and cook until the internal temperature reaches a minimum of 145 degrees Fahrenheit.

Toast or grill your bread or buns. Assemble the burgers.
